Yogurt Dressing

Try this thick, creamy yogurt dressing that includes garlic in its ingredients for a variety of salads, raw and cooked.  It is used around the Mediterranean area, especially in Greece, Turkey, Iran and some Arab nation.

Ingredients:

2 cups thick yogurt (drain any excess liquid)

1/3 cup extra-virgin olive oil

1/4 cup fresh lemon juice

Sea salt to taste

2-3 teaspoons minced garlic

2 tablespoons chopped mint or dill (optional)

In a bowl, mix the yogurt with the olive oil and the lemon juice.  Salt to taste.  Add the minced garlic and other herbs if desired.

This dressing is commonly used with cooked eggplant, mushroom, beets, spinach and carrot salads, as well as raw cucumber salads.

Note: For added health benefits, try to use only the best yogurt that includes Acidophilus cultures.
